History

Founded in 1675, the Pure Land brewery, Masuda Tokubee Shoten, is one of Kyoto’s most esteemed sake producers. Under the guidance of 15th-generation owner Junichi Masuda, the brewery seamlessly blends deep-rooted tradition with an innovative forward-thinking approach, never compromising on the meticulous details that ensure the sake's exceptional quality.

 

The Masuda family believes sake has the power to elevate the mind and spirit, enriching both everyday moments and life’s most extraordinary occasions. Pure Land Sake embodies this ethos – more than just a drink, it’s a sake that touches the heart and opens a world to new, meaningful experiences.

Terroir

Water and Rice are living elements derived from nature and bless the abundant beauty of Pure Land Sake.

 

Our brewery resides along the Horikawa River in Fushimi, Kyoto one of Japan's premier sake brewing regions due to the purity and softness of the enriched mountain water flowing deep underground. The groundwater that springs up has a characteristic delicate flavor and mellow mouthfeel.

We begin each brewing season with the cultivation of local indigenous Iwai rice from an allocated parcel along the Uji River. Our rice is grown organically with pesticide-free farming, a true blessing of nature produced from the soil of Kyoto.

Brewing

Historically, sake was only brewed in winter because The cold temperatures facilitated controlled fermentation and prevented bacterial contamination, leading to higher quality sake. While advances in technology have allowed Japanese brewers to brew all year round, Pure Land is brewed during the winter months as the weather cools shortly after our rice is harvested by local farmers. The Masuda family and the brewing team take great care and attention to every detail in the process to maintain the outstanding and distinctive quality of Pure Land Sake.
